10 Barrel Brewing Company

We went to 10 barrel tonight and there was nothing but magic before us , magic pouring from every tap. It was great service, not as long of a wait as was expected (maybe because I had a delicious Revolution Red Ale in my hand) and we got seated with appetizers on our table quicker than a dog begs for food.
I tried the Sinister Black on nitro tonight and it had the same delicious flavor of the original plus a velvety carbonation and lingering chocolate vibe that I really enjoy. They are a staple in my inebriation with their beer in most of the stores around town.
I enjoy 10 barrel because of the down to earth atmosphere. The servers seem to really enjoy their jobs and actually care about what they are serving. Our bar-maiden was not overwhelming and helped us through every decision we made on the menu. Even though we do eat out a-lot we like to explore the menu and get our servers opinion, so I appreciate a refreshing view point on the menu items.

  1. 10 Barrel alone is almost reason enough to move to Bend. We didn't get to spend enough time there, but we did try a flight of beers, and they were fantastic. Glad you guys got to enjoy the Sinister on nitro.

  2. So, some homebrewing questions for you:
    How much do you rely on recipes? For example, if you have leftover hops from another batch that you've been keeping in the fridge, would you substitute those and use them for your next batch? How close in bitterness and whatnot should they be to the recipe's recommended hops?
    Do you keep the lid on the kettle during the boil? What about when it's in the ice bath?
    Do you need to rinse of the equipment after soaking in the iodophor sani bucket?
    That's all I can think of for now, but I'm sure I'll have more questions as I go along.

  3. Brian, I rely on other peoples recipes to get ideas for personal recipes, in other words I do not copy. It is way more fun to take the mistakes and triumphs one, two, three or ten people have made and decide what you want to follow. When creating a recipe I will try and find online what people have done in the past, plus what I want to do in order to create the perfect beer for me. If you just copy what someone has done then it is no longer an art, it has become a job.

  4. Hops are a fragile herb and need to be kept away from oxygen as best as possible after they have been picked from the vine. When the farmer picks and sells them to a manufacturer they are stored at around 26 Deg F until they are shipped to a hop distributer (any homebrew store) which they are kept at this temp. So when I buy hops I keep them in my freezer until use and then immediately put them into a glass jar back in my freezer for next brew. According to Brewingtechniques.com hops should be store at 30 through -5 deg F for optimal preservation of quality.
    For use in the next batch I would try and find out what Alpha Acid (AA) content the hop your recipe calls for has. Hops start losing their AA content as soon as they are harvested and the rate of loss depends on the storage temperature as well as the amount of oxygen present.
    As long as you take care of you hops and use they proper AA content for your recipe you will be fine. You should definitely go to www.Tastybrew.com which listed at the top of the blog in order to put together your perfect recipe.

  5. as for rinsing from the iodophor, no you do not need to and you should not do that. If you are sanitizing your equipment the last thing you want to do is put unsanitized water onto it. Just let it air dry or just fling it around until the water comes off it. You can actually just put it straight into the beer if you want, iodophor at that concentration leaves not residual taste or smell. As long as you use the 12.5 PPM (1 capful per 2.5 gallons of water) for two minutes, you will be fine.

  6. I forgot to mention that when it comes to hops I have left them in my freezer for over a month with no noticeable difference. I am sure they were not top notch when I used them but they still got the job done.
